Our Merlot block always seems to come through with the goods. The Cabernet was good this year as well and blended the two to make a classic red made sence. The machine pick grapes were destemmed and crushed then fermented in open vats before been racked to barrel for Malicactic fermentation, the pressings going to our press for gentle extraction. The wines were aged in new and old French oak for 12 months before blending. Traditional egg white fining was used prior to bottling.
