Shiraz is a classic Hunter variety, reflecting the natural adaptability of the Shiraz grapes to the new world and the Hunter in particular. Grown in red clay soil over limestone conglomerates, on a northeast sloping hillside, the Tintilla Shiraz vines enjoys ideal growing conditions. After a good dry growing season the night harvested grapes were cold soaked to extract maximum fruit and phenolics, then open fermented until almost finished fermentation. Fermentation is finished in New (about 40%) and old French and American oak barrels were used for malolactic fermentation and subsequent ageing. After 15 months in oak, the wine was bottled and stored before release.
