Hand plunge of the cap ensured good mixing of the skins with the juice. The wine was aged in 20% new & old 300L French oak barrels for 12 months.

Tasting Notes

Mideum bodied yet firm and elegant with cherries and plumbs, violets, savoury cranberries and earthiness to taste. This will develop into a deeply complex wine.

Matching Foods

This is a great wine with roasts and gamey meals, the acidity will cut into oils and fats. Enhanced flavours develop in the presence of food. Being medium in body It does not compete but rather compliments a meal.
